HAMPTON -- Located at 836 Lafayette Road in Hampton, Jumpin Jack's Java express drive-through coffee and pastry shop is the culmination of owner Nick Birmbas' 10-year dream.

Nick, the owner of Lena's Sub Shop for 13 years, wanted to keep his business in Hampton and partner with some long-time friends to bring his dream to reality. Beals Associates, Coastal Architects, Favorite Foods, Wholesale Marketplace, De Niro Development, and others gathered to wish Nick well on the grand opening.

Jumpin Jack's Java is named in honor of Jack Lessard, a treasured friend and supporter of Nick's over the years. Although Jack could not join the crowd for the ribbon cutting, Nick made sure that he was part of the celebration in spirit on Wednesday, Dec. 21.

Surrounded by family, friends, many contractors, suppliers, employees, town officials, and representatives from the Hampton Area Chamber of Commerce, Nick oversaw the ribbon cutting to signal the opening of Jumpin Jack's Java to the public.

Nick's three children, Kostas, Yianni, and Stavroula, held the ribbon and did the honors with giant scissors to the cheers of those assembled out front of the unique building that houses the shop. Styled after a vintage diner and brightly colored, the shop offers two drive-thru windows. There is no inside seating or counter service.

The concept was developed to serve mainly commuters and those with limited time, who want a quick stop for their coffee and pastry and get right back on the road. Coffee, hot chocolate, chai tea, donuts, bagels, and pastries are some of the menu items served up by the friendly staff.

Jumpin Jack's Java is open from 5 a.m. until 4:00 p.m.
