Couple cooks up mini burgers, wraps at Eaton Field

HAMPTON — For Nick Lastrina, sliders are the perfect snack food to sell out of a truck. Americana, Italian, Mexican – he can do it all with a tiny sandwich.

“I like to cook a little bit of everything,” said Lastrina, 29. “I came to the conclusion - we’ll just make everything in slider form. That way we don’t have to specialize in one thing.”

Lastrina and his girlfriend Meghan Evans, 28, of Hampton, opened Endless Sliders, a new food truck stationed at Eaton Field, Monday through Wednesday nights. The truck also offers catering services for events and festivals.

Right now, the truck features a classic cheeseburger on a pretzel bun, a chicken Caesar salad slider in a pita wrap and caprese slider on ciabatta bread.

Lastrina said he was exposed to cooking at a young age, growing up in a large Italian family where big meals were a fixture. When he got older, he said he became the designated cook when his friends got together to watch sports.

“I always ended up cooking for my friends,” Lastrina said. “A lot of Sunday football days.”

Lastrina eventually began working as an event marketer for food companies like Kellogg’s and Morning Star Farms. It was Lastrina’s job to travel and promote the food products.

Lastrina met Evans, a fellow event manager, three years ago during an event in Manchester.

As they worked events together on the road, they agreed they would one day start their own food truck business.

Last winter, Evans became ill, taking the couple off the road while she rested in Hampton.

It was during that period when the couple decided to make 2015 the year they would start their truck.

To get the truck, Evans’ father sold them a handicapped vehicle that was available at the car dealership he owns, Northeast Motors. The couple decked the truck out the with surf decorations, including a surfboard counter designed by a friend.

For the sliders themselves, the two took their time to find the right meats, produce and bread to use. It took several months to find the right pretzels to be used for the classic cheeseburger slider. Now, they order them all the way from Wisconsin, Lastrina said.

Lastrina said he plans to experiment with the menu, but any changes he’ll make will be heavily scrutinized before putting it on the menu.

“We will taste test them, work on them until there good enough to serve out this window,” Lastrina said. “I don’t want to put out a subpar product.”

Evans said the plan is to expand from Eaton Park to other parts of town.

The park has been a good place to start, though, Evans said, with softball games every week. She and Lastrina said they’re also looking forward to flag football season, which also plays at Eaton Field.

Lastrina and Evans are also planning on taking their truck on the road.

They’ll be at the Apple Harvest Day in Dover on Oct 3 and the New Hampshire Food Truck Festival on Oct 5.
